Hole In One Cafe Recipes: Cocoa & Fig Bliss Balls

This recipe is a favourite of our regulars at the Hole In One Café here at Millbrook Resort, particularly with kids.

Gluten and dairy free and no added sugar, these balls are the perfect mid-afternoon snack, and if figs aren’t your style then you can simply replace them with more dates.

INGREDIENTS

630g dried figs 330g dried dates
600g raw cashew nuts
10g vanilla paste
40g cocoa
48g cinnamon
28g salt

METHOD

  1. Remove the stalks from the dried figs, then roughly chop up with the dried dates.
  2. Place in a food processor and blend until almost smooth.
  3. Next, add all other ingredients and blend until well combined and mixture is paste-like.
  4. Spoon out the mixture into tablespoon sized balls, and roll into a ball.
  5. Place on a tray lined with baking paper. Refrigerate until ready to enjoy.

If you can have dairy, melt dark chocolate top for an extra treat!
